Lygdda’s Habichuelas Guisadas

Ingredients
◦ 1 tbs of Sofrito

◦ 3 mini sweet bell peppers
◦ 1/2 small onion
◦ 1/4 cup chopped culantro

◦ 1/4 cup cilantro
◦ 1 tsp olive oil
◦ 15.5 oz can pink or any color you like, and rinse under call water
1/2 cup canned tomato sauce
◦ 1 medium potato, peeled and diced 1/4-inch
1/2 a small calabaza squash or about 1 cup of pumpkin cut into pieces.
◦ 1 packet of powder chicken
◦ 1 tsp of tomato paste
◦ 1/4 tsp oregano
◦ 1/4 tsp of dry cilantro
◦ 1 1/4 cup of water
salt to taste
black pepper to taste
Instructions
Add oil to a medium saucepan and sauté sofrito, cook on medium heat about 2 minutes.
Add, peppers, onion, tomato sauce, tomato paste, powder chicken, chopped cilantro, chopped culantro, dry oregano, dry cilantro salt if needed and pinch of black pepper.

Add potatoes, calabaza and the rinsed beans to the saucepan along with 1 1/4 of water.

Bring to a boil, then cover and simmer on low for about 20 minutes, or until potatoes and calabaza are soft.

Serve over your favorite rice!
