Coconut Ice

As a little girl, when I visited my grandmother’s house in Puerto Rico, she always had Limber in her freezer. She had all the flavors: orange, chocolate, mango, pineapple, cherry, tamarind, passion fruit, strawberry, and many more. My favorite of all was the coconut flavor, which she made from scratch. This recipe is an accessible version of her coconut Limber.

My grandma used coconut chunks, different kinds of milk, cinnamon sticks, and vanilla beans. Those were such unforgettable memories, and I miss her dearly. I’m happy to share this recipe with you, and I hope you try it. It’s so easy and delicious; your kids will love it!

You might be wondering about using lactose-free milk. Yes, that’s correct! Not only do I need to avoid regular milk, but the combination of lactose-free milk and the sweetness turned out incredibly good. While it’s optional, I encourage you to give it a try!


Ingredients
1 can of coconut milk 

1 cup of Goya Coconut Milk Cream of Coconut, 15 oz

1/2 cup of milk 

(For this recipe I used lactose-free optional, but the taste is incredible you won’t regret it.)

1 tsp of vanilla extract 

Mix all milk, vanilla extract, and cinnamon together in a blender until the mixture is thoroughly combined.

Pour mixture into 8 oz Disposable Cups for 8 hours overnight.
