**Instructions:**
1. **Boil the Potatoes:** In a large pot, bring the 8 cups of water to a boil. Add 1½ tablespoons of salt and the quartered potatoes. Boil for 20 minutes or until the potatoes are tender.
2. **Prepare the Mixture:** Drain the potatoes and then mash them in a large bowl. Add the butter, beaten egg, and ½ teaspoon of salt. Mix well and let the mixture cool in the refrigerator.
3. **Shape the Filling:** Once the potato mixture has cooled, divide it into 12 equal parts.
4. **Form the Balls:**
– Sprinkle cornstarch on the palm of your hand to prevent sticking.
– Take one portion of the potato mixture and spread it across your palm.
– Press the center with your fingers to create a small indentation.
– Place a small amount of filling (such as cheese, if desired) into the indentation.
– Gently cover the filling with the potato mixture and shape it into a ball, adding more cornstarch as needed to prevent sticking.
– Repeat this process until you have formed all 12 filled balls.
5. **Fry the Balls:** Heat plenty of oil or butter in a frying pan until it reaches 350°F. Carefully add the potato balls and fry them until they are golden brown.
