
Sorullos de Maiz (Cornmeal Sticks) are delicious appetizers made from cornmeal, sugar, or cheese. These tasty snacks are so good that you won’t be able to stop eating them..
In Puerto Rico, they usually make these for breakfast and enjoy them with a great cup of coffee. However, these appetizers can be enjoyed at any time of the day.
As an adult, I stuff it with my favorite cheese, but you can use any cheese you like. I also make a dipping sauce called mayo-ketchup, which is made with mayonnaise and ketchup.
Here’s my recipe. It’s very simple and easy to make.

Ingredients
1 cup of yellow fine cornmeal.
2 cups of water
3 tbsp of sugar
1 tbsp of butter
1/2 cup of shredded cheddar cheese
1/8 tsp salt
Instructions
- Place a medium saucepan over medium heat. Add the water, butter, sugar, and salt to the pan.
- Bring the mixture to a boil, then reduce the heat to low. Gradually whisk in the cornmeal, adding it a little at a time. If you add too much cornmeal too quickly, it may become lumpy. Continue whisking as you incorporate the cornmeal in small amounts for 3 to 5 minutes, or until the dough is soft and pliable.
- Remove the mixture from heat and let it cool until it is safe to handle with your hands. If the dough feels dry, hard, or crumbly, gradually add warm water a little at a time. The final texture should be soft and springy, resembling play dough.
- Add the cheddar cheese and mix well into the dough until it completely incorporates.
- Grease your hands with oil. Take about 3 tablespoons of cornmeal dough, roll it into a ball, and shape it into a stick that is 3 inches long and about 1/2 inch wide. Repeat with the remaining dough, adding oil to your hands as needed.
- Heat a large pan over medium-high heat or to 350°F. Add oil until the pan is about halfway filled.
- Deep-fry the sorullitos in batches of 3 or 4 until golden brown. Drain on paper towels and place them on a cooling rack to maintain crispness.
- Serve with our famous dipping sauce, mayo-ketchup.
- Mayo-Ketchup
3 tablespoons of mayonnaise
1 1/2 tablespoons of ketchup
1 clove of garlic, minced (or ½ teaspoon of garlic powder)
Whisk mayonnaise and ketchup together in a bowl until well combined.
Serve the sorullitos with the mayo-ketchup dipping sauce. Enjoy. ¡Buen provecho
