Corn Salsa

**Ingredients:**

– 1 can of sweet corn or 3 cobs of fresh corn (kernels removed from the cobs)

– 1 large vine-ripened tomato (seeded and diced)

– 1/2 cup red onion (diced)

– 1/2 jalapeño pepper (diced; use a whole jalapeño for a spicier salsa, and remove seeds for a milder flavor)

– 2 tablespoons chopped cilantro

– Juice of 2 fresh limes

– Kosher salt and freshly ground black pepper, to taste


**Instructions:**

1. In a mixing bowl, combine all the ingredients.

2. Refrigerate for about an hour before serving.

**Yield:** Approximately 3 cups.

**Note:** If you prefer a less citrusy flavor, you can use one lime juice. For a spicier salsa, use a whole jalapeño, seeded and diced.
