
🥗 Lemon-Spiced Garbanzo Salad
A soft, zesty garbanzo salad made with fresh vegetables, gently sautéed onion, bright lemon, and warm spices. Light, comforting, and full of flavor.

🛒 Ingredients (2–4 servings)
• 1 can garbanzo beans (chickpeas)
• 1 cucumber, diced
• 2 Roma tomatoes, diced
• ½ cup fresh parsley, chopped
• ¼ yellow onion, finely diced
• 1 whole lemon, juiced
• 4 tbsp olive oil, divided
• ½ tsp ground cumin
• ½ tsp chili powder
• Salt & black pepper, to taste

👩🍳 Instructions
1. Soften the garbanzos
• Drain and rinse the garbanzo beans
• Place in a small pot, cover with water
• Simmer 10–15 minutes until tender
• Drain well and let cool to warm or room temperature
2. Cook the onion
• Heat 1 tbsp olive oil in a small pan
• Add diced yellow onion
• Cook 3–5 minutes until soft and translucent
• Remove from heat and let cool slightly
3. Season the garbanzos first
• In a large bowl, add warm garbanzos
• Toss with lemon juice, 3 tbsp olive oil, cumin, chili powder, salt, and pepper
4. Assemble the salad
• Add cooked onion, cucumber, tomatoes, and parsley
• Gently mix until well combined
5. Rest & serve
• Let sit 10–15 minutes for flavors to blend
• Taste and adjust seasoning if needed
