Surf & Turf Jibarito (Plantain Sandwich)

This Surf & Turf Jibarito is a Puerto Rican-inspired sandwich that swaps bread for crispy fried green plantains. Filled with juicy steak, seasoned shrimp, melted cheese, fresh lettuce, tomatoes, and creamy mayo-ketchup sauce, every bite is packed with incredible flavor. The best part? You can easily customize it with your favorite protein and toppings!

Ingredients

For the Meat

You can customize your Jibarito with your favorite protein. This version is made with steak and shrimp, but you can also use:

  • Steak
  • Chicken
  • Shrimp
  • Fish
  • Deli meats
  • Vegetables (for a vegetarian option)

For the Mayo-Ketchup Sauce

  • ½ cup mayonnaise
  • ½ cup ketchup
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste

Mix all ingredients until smooth.

For the Sandwich

  • 2–4 green plantains (1 plantain makes 1 sandwich)
  • Lettuce
  • Tomato slices
  • Swiss or mozzarella cheese
  • Prepared protein of choice
  • Oil for frying

Instructions

  1. Peel the green plantains and cut each one in half lengthwise.
  2. Fry the plantains for about 5 minutes until slightly tender.
  3. Remove and drain on paper towels.
  4. Flatten each piece using a tostonera or the bottom of a plate.
  5. Fry again for another 4–5 minutes until golden and crispy. Drain well.
  6. Spread the mayo-ketchup sauce on both plantain halves.
  7. Add the cheese while the meat is still hot so it melts slightly.
  8. Layer with lettuce, tomatoes, your cooked protein, and any additional toppings.
  9. Top with the second fried plantain and serve immediately.

Optional

Add sliced avocado or drizzle Mojito (garlic sauce) on top for even more flavor before serving.
