
Pumpkin Spice Coquito
Fall is my favorite time of year—the cozy weather, the warm spices, and of course, all the pumpkin treats! This Pumpkin Spice Coquito is one of my absolute favorites for the holidays. The creamy blend of coconut, sweet milks, spices, and that hint of rum will have your family and friends asking for more.
Every year, I make a traditional Coquito, but I also love creating fun flavor twists…and this one is by far my favorite. If you love the smell of pumpkin and spices filling your home, you’re going to love making this recipe. It also makes a beautiful homemade gift for the holidays!
Ingredients
• 1–2 cups white rum
• 1 (14 oz) can sweetened condensed milk
• 1 (15 oz) can cream of coconut
• 1 (13.5 oz) can coconut milk
• 1/2–1 cup pumpkin purée
• 1 (12 oz) can evaporated milk
• 1 tsp ground cinnamon
• 1/2 tsp pumpkin spice
• 1/4 tsp nutmeg (optional)
• 1 tsp vanilla extract
• 1/8 tsp salt
Instructions
1. Blend in two batches:
Since everything won’t fit in one blender, start by blending the coconut milk, condensed milk, vanilla, cinnamon, pumpkin spice, and nutmeg.
2. In a second blend, mix the cream of coconut, evaporated milk, pumpkin purée, and rum.
3. Combine: Pour both mixtures into a large bowl and whisk until fully combined.
4. Transfer to bottles and refrigerate for several hours or overnight.
Shake very well before serving, as the ingredients naturally settle.
5. Garnish: Sprinkle a little ground pumpkin spice on top before serving.
