At Picante y Sabor, every recipe I share comes from my own kitchen and my real-life experience. This banana bread is soft, extra moist, and full of warm cinnamon and rich banana flavor—but it’s also intentionally made without nuts.

As someone with a nut allergy, I know how important it is to feel safe and confident in the food you’re eating. That’s why I choose to create recipes that don’t rely on nuts, without sacrificing taste or texture.

This banana bread is proof that you can have something incredibly delicious, comforting, and full of flavor—while still being mindful of allergies. It’s made to be enjoyed, shared, and trusted.

⏱️ Time & Temperature

  • Temperature: 350°F
  • Actual Bake Time: 40–50 minutes
  • Start checking: 35–40 minutes

Ingredients

  • 4 very ripe bananas (mashed)
  • ½ cup (1 stick) unsalted butter, melted
  • ¾–1 cup sugar
  • 1 large egg
  • ¼ tsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • Pinch of salt
  • 1¾ cups all-purpose flour

👩🏽‍🍳 Instructions

  1. Preheat oven to 350°F and grease or line your loaf pan.
  2. Mash bananas (leave some chunks).
  3. Mix in melted butter.
  4. Add sugar, egg, vanilla, and cinnamon—stir well.
  5. Add baking soda + salt.
  6. Mix in flour just until combined (don’t overmix).
  7. Pour into pan.
  8. Bake 40–50 minutes.
  9. Let cool before slicing.

1. Use Very Ripe Bananas

The darker, the better. Brown, spotty bananas = sweeter flavor + more moisture.


🥄 2. Don’t Overmix

Once you add the flour, mix just until combined.
Overmixing = dense, tough bread.


⚖️ 3. Watch Your Batter Consistency

With 4 bananas, your batter should be:

  • Thick
  • Pourable
  • Not watery

👉 If it looks too loose → add 1–2 tbsp flour.


⏱️ 4. Start Checking Early

Every oven is different (like yours 👀).

  • Start checking at 35–40 minutes
  • Toothpick = a few crumbs, not wet batter

🔥 5. Prevent Over-Browning

If the top gets too dark before the center is done:
👉 Cover loosely with foil and keep baking


❄️ 6. Let It Cool Before Slicing

Wait at least 20–30 minutes
This helps the bread set and keeps it from falling apart.


🍞 7. Make It Easier to Remove

Line your pan with parchment paper or grease well to avoid sticking.

Because of the extra bananas, your bread will be:
